WPIEALBA16.jpgAlba is known as home to Piedmont’s authentic Truffle (tartufo). Besides all the truffle recipes, local menus offer a selection roasted pigeon, quail risotto and pear semifreddo ice creams.

Alba is best known for the truffle, a fungus that is used as a garnish, imparting a rich flavor to all manner of dishes, from savory to sweet. Chefs and gourmands vie for the best truffles, ranging in price from a few dollars for a small, black one to over $700 for a prized white truffle, to use in the night's recipes. Shaved over pasta dishes and used in sauces, or blended into condiments, the truffle's distinctive flavor adds to almost any dish. The Piedmont region is known for its use of butter, rice and polenta, unlike the southern regions of Italy. The most famous of the Piedmont recipes is the bagna caoda, where fresh vegetables are dipped into a communal pot of warm oil and spices, similar to a fondue.

Desserts revolve around chocolate, as recipes involving the use of it in bicerin, a foamy sweet beverage with layers of espresso, chocolate and whipped cream, that date back to the 1600's. The ingredient has been perfected throughout the ages; including rich bites of candy filled with hazelnut/chocolate pastes call ginaduiotti, and sumptuous desserts. Nutella, a hazelnut chocolate spread, was born in this city and finds its way into many of the desserts.
